Recording is easy. The hard part is what happens when something goes wrong halfway through: a phone call, the battery, the app dying. That's where the difference shows.

The Watch isn't an accessory: it's a real recording head, with its own engine and its own recovery. Start from there even with the phone in your pocket.
If a recording is incomplete it tells you, and tells you which part is missing. No file that looks whole and isn't.
The features that matter stay invisible until you need them. These are verified on real hardware, not only in tests.
Recording stops and resumes on its own when the call ends, then stitches the pieces into a single file. The interruption stays on record: you know it happened and how long it lasted.
On the next launch it finds the orphaned segments and rebuilds the recording. If a segment is damaged it tries to repair it instead of discarding it: in one real case that brought back 58 seconds of audio that would have been gone.
Final file and individual segments encrypted with AES-256-GCM, key in the device keychain. That includes what the Watch has just captured.
Full-text search, folders, timeline markers, suggested titles, filters. And you can export everything whenever you like: JSON, SRT and VTT subtitles.
Face ID unlock and discreet screen themes, for when you're recording somewhere you'd rather not advertise what you're doing.
